衛生福利部食品laennec藥物管理署表示，反式脂肪分為天然、人工兩種，前者存在牛隻等反芻動物中，人工反式脂肪則主要來自氫化植物油，這類油脂可以增加油脂穩定性、耐高溫，但製程中若氫化不完全，脂肪的分子結構會改變，產生危害心血管健康的反式脂肪。
不過，不完全氫化油有可能出現在民眾愛吃的蛋糕、甜點、麵包、餅乾等烘焙食品中，包括酥皮、酥油、菠蘿麵包等食物。
為了響應世衛、跟進美國腳步，食藥署經專家會議討論後訂定「食用氫化油之使用限制」，決議給予食品業者3年間調整，並自107年7月1日起製造的食品，全面禁止使用不完全氫化油，違者將依法要求限期改正，限期未改可處3萬至300萬元罰鍰。
